Our Food Philosophy
Headed by Award-Winning Executive Chef Jason Peppler, Head Chef Raoul Hinkson and Breakfast Chef Andrew Tolley, our team are passionate about creating the finest menus using fresh local ingredients.
As a team we are committed to sourcing all ingredients locally, including growing herbs and vegetables in our very own gardens to ensure we deliver you the very best.
We love good food and love to share our food with the Brisbane community, who we have the pleasure of welcoming to corporate events, celebrations, weddings and for breakfast, lunch and dinner in the Bistro all year long.
With a history as rich and colourful as Brisbane’s, the land upon which Victoria Park Golf sits has been: a quarry; a rifle range; the proposed site for Queensland Government House and later for the University of Queensland; an encampment for World War Two American troops; a single-men’s refuge and squatters camp – and then a nine-hole municipal golf course and clubhouse which opened in 1931.
More than six decades later, Adam Flaskas and Siobhan Bickle, residing in Melbourne at the time, were looking for an ideal location to expand on their love for hitting a few balls on a driving range. In December 1999 partners Adam Flaskas and Siobhan Bickle, Louis and Mary Bickle, successfully tendered to the Brisbane City Council for the redevelopment, construction and operation of the Victoria Park Golf Complex and the creation of the Victoria Park Function Venue and Caddy Shack Cafe.
Opening the complex in 2002 Adam, Siobhan, Louis and Mary, along with their first employee Allen Hill, ran the golf shop from dawn til dusk where later that year Siobhan also coordinated functions from. They ran the functions single handily, with Siobhan and Mary cooking and Adam serving the guests. With sheer passion Adam and Siobhan resided onsite with three guard dogs for 6 years in what is now office space. Victoria Park has continued to grow and evolve under the guidance of the Directors, and is now one of Brisbane’s busiest function & lifestyle venues, with a reputation for quality and diversity. From its conception of 3 employees Victoria Park now employs 150 full time and casual staff members.

Right now, thousands of Australian children with autism are missing out on vital early intervention in Australia. AEIOU Foundation have a simple, yet crucial goal: to provide life-changing early intervention for young children with autism. The simple ability to communicate a need, a want, or an emotion such as fear, love and happiness makes an enormous difference to a child’s life and everybody in that child’s life. AEIOU Foundation is a not-for-profit organisation and one of Australia’s leading providers of full-time early education and therapy support for children aged 2½ – 6 years. Their high-quality early intervention services support children to develop important life skills to help them communicate, connect, develop independence and transition into mainstream education. It should be the fundamental right of every child diagnosed with autism to receive the best, evidence based support, not a privilege. The window of opportunity for life-changing early intervention for children with autism is surprisingly short. Together we can light the way and allow children with autism to shine into the future. Corporate Social Responsibility
Victoria Park are committed to making a difference to the community in which we live and work, as such we have adopted a number of Corporate Social Responsibility actions including:
• Sourcing fresh local produce with short, low carbon producing transport. We are committed to supporting local suppliers, reinvesting in the local Brisbane economy.
• Ensuring our cleaning products are recycled and are made from a high percentage of recycled products. We also have an OZ Tank on-site, which helps us to minimise the use of chemicals.
• Announcing an Annual Charity Partner who we support on a larger scale, raising funds to assist them to achieve their important mission.
• Instigating a donations program, supporting hundreds of charitable organisations each annum by providing on-site experiences for use in raffles and at fundraising events.
• Implementing an energy saving policy to contribute to reducing greenhouse gases. This includes the introduction of ‘shut down’ policy for equipment and lighting not in use throughout the complex.
